The wod "otap" is the Tagalog version of the utap, which traces its origins from the kitchens of the sugar barons of the Silay in the Visayas. Otap is a flaky sugar-dusted confection that can be enjoyed with hot soup, coffee, tea or just dessert. Otap belongs to the wonderful family of soup biscuits that have been passed on to generations of Philippine celebrations of eating and gift-giving.
