Atchara, pickled papaya from Monika.

Atchara can be used for fried or grilled food but is also a fine side dish on its own. The main ingredient is green unripe papaya that is being shredded. Beside papaya there is also carrot slices, thin julienne slices of ginger, bell pepper, union and garlic. All is mixed in vinegar, sugar and salt that preserves. The mix is put in a air-tight jar where it is kept in room temperature. An opened jar should be kept in a refrigirator to preserve the taste.
